Sick care vs. Health care
Eating healthy can be expensive... but how much is your health worth?!? I try to eat healthy & workout regularly because I hate medicines & I don't ever want to take them. Working out doesn't have to be dreadful; find fun activities that you enjoy. My favorites are yoga, Pilates, SUP, and dance. New found love: aerial silks. Enjoy life & take care of yourself :)

Chocolate overnight oats chia pudding
1/2 c Chocolate almond milk or vanilla almond milk + choc protein powder
3 T rolled oats
2 T chia seeds
Combine these in a jar or mug. I use mason jars so I can shake everything up. After mixing everything together, add more milk if it's too thick. You want this mixture a little runny because over night, the oats & chia seeds will absorb the milk, thus make it a lot thicker. I usually prepare this before I go to bed and leave it in the fridge over night. In the morning, I usually shake up the jar some more, then add my favorite toppings: banana slices, hemp seeds, agave/honey.

Super Moist & Delicious Healthy Banana Spice Mug Cake
3 T rolled oats
2 T egg white (I use All Whites liquid egg white)
2 T almond/coconut milk
1 t cinnamon
1/2 t baking powder
1 t agave (or 1-2 medjool dates)
1 ripe banana
Blend everything together in either a blender or food processor until smooth. Pour into a mug or 2 custard cups. Microwave for 1-2 minutes.
I handwhipped some Greek yogurt with my homemade salted caRAWmel. Topped my mug cake with that, drizzled more salted caRAWmel, & sprinkled some cacao nibs. Voila! :)

Protein Chocolate Oats 'Mug Cake'
I've always wanted to try to make my own mug cake and I have to say that I'm a fan. As much as I love baking, it's so time consuming... Microwaved mug cake is a much better choice because: 1) I don't have to spend much time baking 2) I can make it super healthy 3) small portion (dessert for 1 or 2)
Today I've made chocolate protein oats cake, topped with strawberry yogurt sauce, salted caRAWmel sauce, and cacao nibs. Everything is pretty much homemade except for the cacao nibs.
Cake:
3 T almond/coconut milk
2 T rolled oats
1 T egg white
1 scoop protein powder (I used Vega One - plant based protein)
1 T cocoa powder
1 t agave
1/4 t baking powder
1 t almond/cookie butter (optional)
Mix everything together and pour into a mug (I used 2 custard cups). Microwave for 1 minute.
Yogurt sauce:
Blended greek yogurt (1/2 c) with fresh strawberries (about 2-3), & a little bit of agave (1/4 t)
Salted caRAWmel sauce:
3 medjool dates (pitted) blended with 1 c water & 1/2 - 1 t salt

Hello Spring!!
Finally it's warm outside! :) 70 degrees weather is just perfect. Bf & I went to a park near my house after work to enjoy the nice weather (more like climbing trees & doing flips lol) I found kale grown at the park for decoration... I know where I'm getting kale for my recipes from now on =P JK!

How to be happy :)
I had a great conversation with a colleague the other day. He mentioned that his kids complained about being bored over the weekend right after they just got back from Disney; they visit Disney multiple times a year... lucky kids, which they don't realize. I (and I'm sure a lot of people) have never been to Disney World or Land. He brought up a great point: he's going to start asking them to count their blessings every time they complain about something trivial. I thought it was an awesome idea. Count your blessings (literally count them). There are a lot of people out there that would love to have your life so there's no point in whining about little things that don't go your way. Just be grateful & happy for what you do have. I'm grateful for: my family, bf, friends, health, having a roof over my head, and a job.

Jalapeño Veggie Egg Muffins
Easy and healthy breakfast/snack on the go. Very simple to make.
12 eggs (or egg whites if you want to be healthier)
Add seasonings to your tasting (I went with pepper, fish sauce, oregano, garlic, and miso)
Dice 2 jalapeños
Dice 1/2 red onion
Chopped up kale (as much as you want)
Diced carrots (as much as you want)
Corn (as much as you want)
Combine everything together. Pour the mixture into a muffin pan & bake. I baked my egg muffins at 300 degrees for about 15 minutes. Adjust the temperature based on your oven. You can add pretty much anything you want to these egg muffins so you don't have to eat the same thing all the time.

Raw Veggie Dinner
Walnut sunflower loaf topped w/ chipotle sauce, broccoli cauliflower medley, raw veggie kraut, collard kale salad, served with sweet potato chips, guacamole and flax chips.
Healthy Dessert Smoothie
1 c frozen strawberries
3 Tbsp crunchy cookie butter (Speculoos from Trader Joes or Biscoff from Publix)
1 c almond/coconut milk
1-2 tsp cinnamon
1/2 c greek yogurt
Ice (optional)
And blend!!
Not the healthiest smoothie recipe but it's a lot better for you than ice cream or a slice of cake :) enjoy!!

Crunchy Cookie Butter Ice Cream (only 3 ingredients)
A bit too sweet for my taste but it was delicious and a great 1st try. I need to add less cookie butter next time. Simple recipe below yields about 1 quart of finished product.
Blend/whisk together:
2 c half & half
1 can of condense milk (about 8 oz)
1 c crunchy cookie butter (Trader Joe's Speculoos or Biscoff Spread)
Add the mixture to an ice cream maker (refer to the manual for your specific model). I have a Rival 6 qt ice cream maker and it took about 30 mins to churn the ice cream. You want to churn it until you get a fluffy mashed potatoes texture. I transferred the ice cream into a plastic container and put it in the freezer (at least 5-6 hours). Super creamy and delicious ice cream!! I want to try making this with coconut milk next time.
